Chocolate Mud Cake


This is another my fave cake. Sweet tooth he..he..
The recipe from Nestle and taste so nice. If you Chocolate lover, you must be love it.

Chocolate Mud Cake

1 cup milk
2 tsp lemon juice
1/2 cup sunflower oil (I use canola oil)
200 gr Nestle dark melts
1 cup hot water
2 tsp nescafe instant coffe (I use Moccona)
2 cups flour
1 tsp baking powder
2 tsp baking soda
1/2 cups nestle baking cocoa
3/4 cup sugar
2 eggs, lightly beaten.

1. Preheat oven to 180 degree celcius. Line base of a 22 cm round baking tin with baking paper. I use cupcake tin.
2. Combine milk and lomon juice and set aside to sour. Place oil, dark melts, hot water and coffee in a medium saucepan. Stir over a low heat until mixture is smooth and chocolate has melted. Cool to room temperature.
3.Into a large bowl, sift flour, baking soda,baking cocoa, baking powder, and sugar. Add eggs to chocolate mixture and mix well, then gradually stir in soured milk. Add chocolate mixture to dry ingredients, mixing thoroughly. Pour cake mixture into prepared pan.
4. Bake for 55 minutes or until cooked for cupcake size. There may be a little moist cake mixture on metal skewer when inserted into centre of cake, this is normal for mud cake. Stand cake in tin for 10 minutes, then turn out onto wire rack to cool. Spread with chocolate glaze ( I'm not using it this time). Enjoy.

Chocolate Glaze

175 gr dark melts, 1/2 cup cream

Combine dark melts and cream in heatproof bowl, place over simmering water, stir until melted and smooth. Refrigerate 30 minutes until thick, spread over top and sides of cake.
